  2. This is healthy because I try to eat lots of fish, veggies, fruit, and nuts in general. I’m pmsing and iron deficient so the hijiki/greens should help. Not so much a recipe as the classic “what can I make with the random shit in my fridge” that turned out way better than expected:

    1. Picked a bunch of herbs, kale, and red pepper from my garden.
    2. Rinsed frozen cod and heated in an air fryer for 4 min at 350, then bathed in melted butter, garlic, lemon thyme, fresh lemon juice, and coated in finely chopped walnuts and almonds. Air fried at 370 for 12 ish min.
    3. In the leftover garlic lemon sauce I sautéed hijiki, edamame, the only red pepper I managed to grow this year, and diced cauliflower. Threw in some sliced canned artichoke, extra chopped nuts, garden kale, some more lemon juice.
    4. Took a shitload of freshly picked basil, an obscene amount of garlic, handful of sunflower seeds, threw in a small amount of parsley, chives, and blended in my magic bullet with olive oil. Totally winged this and it came out delicious. Turned off burner and mixed it in with the veggies in a pan over heat so the flavors would combine. The chopped nuts add a nice crunch and the pesto balances the fishyness of the seaweed, I can’t get over how good this was.
    5. Remembered I put frozen sweet potato puffs in the oven with cinnamon and honey, but that’s ok I like them crispy.
    6. I didn’t take a picture of the blackberries but I threw a little garden mint and honey in with those as a treat. Picked this morning.

    If I could do anything differently I would use fresh fish, because no matter how well you cook it frozen cod always has a rougher texture. The base veggies came out too good to play supporting actress to that lame ass fish. But the whole point was to cook something loaded with nutrients without leaving my apartment, and I think I succeeded.
